Cider “Donut” Cake!

Hello, to all my “Celebrate Always” friends! We just finished celebrating Rod Run 2024 here in Boerne. So, I dug around in my recipes to try something special to serve to welcome all our visitors, and this is what I found – Cider Donut Cake!

I have the word “donut” in quotations because it doesn’t really taste like a cider donut in my opinion. It tastes amazing! It’s much more like a light cake than the pound cake like texture of a cake donut.

This is one of the many recipes that we have tweaked to use our signature mulling spice. It is, in fact, the most popular recipe for using our mulled spices to date, and we sold out of all our inventory of mulled spices before I ran out of cake.

This soft and light and sweet, but not too sweet, mulled cider bundt cake was an absolute hit. People were asking if we sold the cake itself.

The reason the original version of the cake is called an Apple Cider Donut Cake is because the bundt pan shape and coating of cinnamon spices make it look just like a giant apple cider donut.

Best part about this recipe is that even with our tweaks, it is a super easy recipe to make. I will definitely be serving this Cider “Donut” Cake at more events. Enjoy!


Cider “Donut” Cake

Prep time: 15 minutes
Cook time: 45 minutes
Additional time: 25 minutes
Yield: 1 bundt cake
Tweaked from: Apple Cider Donut Cake | Kitchen Fun With My 3 Sons

Ingredients:

  • 1 box yellow cake mix
  • 1/4 – 1/2 cup plus 1 spoonful of mulling spice (we used our signature spice mix), divided
  • 3/4 cup apple juice
  • 1/2 cup unsweetened applesauce (we used one of those individual cups that come in the packs)
  • 3 large eggs
  • 1/4 cup plus 2 tablespoons butter (I used unsalted), divided
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla

Directions:

???? Preheat oven to 350 degrees.

???? Grease and flour a bundt pan. I like to use some of the cake mix instead of flour because it’s handy.

???? Melt your 2 tablespoons of butter and set aside to start cooling. Then, microwave the 3/4 cup apple juice for 1-2 minutes. Stir in one spoonful of the spice mix to dissolve. We had a gallon of prepared mulled cider handy which could be used instead.

???? Using a bowl and mixer, combine the 3 eggs, 1/2 cup applesauce, 3/4 cup prepared cider, cake mix, and 2 tablespoons melted butter. Add 1 tablespoon brown sugar and 1 teaspoon vanilla and mix again. Don’t forget to stop and smell the vanilla!

???? Pour batter into prepared bundt pan and bake for 40-50 minutes or until a toothpick comes out clean.

???? Set cake to cool for 15 minutes before turning it out of the pan onto a cooling rack.

???? Melt the remaining 1/4 cup of butter, and using a silicone brush (because it cleans easier), brush the melted butter all over the cake.

???? Sprinkle your remaining 1/4 – 1/2 cup mulling spice (I only used 1/4 cup on this part) all over the buttered surface of the cake. Feel free to flip the cake so you can butter and sprinkle every glorious inch of your Cider “Donut” Cake.

We recommend serving this delicious Cider Donut Cake alongside a mug of hot Mulled Cider. Making our cider is easy. Just heat a gallon of apple juice to a simmer and stir in one whole package of our mulling spice until dissolved. Yum!
