S’more Popcorn Ball Cannonballs!

Have we got an awesome recipe for you! We, also, have a ghoulish deal for our friends. So, read all the way through to the bottom of the screen!
Yes! I rode home in Mrs. C’s bag last night and helped her stir up a bubbling cauldron of Popcorn Balls to hand out on Halloween Night.
I LOVE popcorn! It’s so much fun to eat! It looks like snow! And, since I was assigned to The Christmas Shoppe in Boerne, Texas, this is probably the closest I will get to snow this year. That’s ok! Popcorn is perfect to throw like a snowball fight.
Have you ever had a snowball fight? It’s a lot of fun. If you decide to use popcorn, it would be genius to play outside. Then, the birds and squirrels can help clean up the mess! Maybe your Elf on the Shelf will have the same idea and you will find him doing a BIG cannonball in a BIG bowl of popcorn!
Popcorn makes me think of Christmas garlands and Halloween popcorn balls and everyday movie nights! It definitely says celebration! So, pop up a big batch and enjoy whatever season you find yourself in.

Now, I know what you really want…. POPCORN BALLS!
Rediculously Awesome Popcorn Balls
No clue where we got this recipe.
Time: 1 hour
Makes: 30-50 balls depending on size
WWSP: 5 each for 40 balls
Ingredients:
- 1 cup of unpopped kernels
- 1 1/2 cup light color corn syrup
- 1 1/2 cup granulated sugar
- 1 (7 oz) jar of marshmallow fluff
- 2 Tblsp butter
- 1 tsp vanilla
Directions:
- Preheat oven to 300 degrees. Pop the popcorn into a bowl, one batch at a time. We use an air popper, but you could microwave or do it on the stove. Carefully, transfer the popped popcorn to a GIANT roasting pan, letting unpopped kernels remain in the bowl. Keep popped popcorn warm in the oven. Honestly, it takes us two foil roasting pans to do this.
- In a large saucepan or cauldron or pot, bring corn syrup and sugar to boil over medium-high heat while stirring gently. (Tip: spray your measuring cup with cooking spray before measuring corn syrup so it will slide out easily)
- Once it gets really boiling, remove from heat.
- Add marshmallow fluff, butter, and vanilla. Stir until it’s all melted together.
- Pour mixture over warm popcorn and stir to gently coat.
- With buttered hands, form into balls. If your hands get too sticky, wash them, re-butter, and keep going. I have to re-butter repeatedly.
- Wrap with plastic wrap and store at room temperature up to one week.
They are delightful! I could eat them ALL DAY! Finding the right recipe took awhile, too, but like any endeavor, it was worth the effort. These balls don’t fall apart, and they aren’t too candied and hard either.
