Chocolate Chip Pizza Cookie Recipe!

Hello, to all my “Celebrate Always” friends! Are you ready to celebrate National Pizza Party Day and National Chocolate Chip Day? Both fall on Friday, May 15th, this year. And, I cannot think of a better way to celebrate than by having a Pizza Party with a Chocolate Chip Pizza Cookie for dessert!
Well, considering that quarantine is starting to diminish, a Pizza Party sleepover with just one or two special friends might make this weekend special for your little ones. Of course, all you mommies and daddies will use common sense to do your best to prevent any virus spreading, I am sure.
S’more has been very excited to help with this baking episode. He’s just like a child. He wanted to pick the toppings, do the sprinkling, and wield the pizza cutter.

The Basics

It’s super easy to make this recipe. You can pick any cookie dough for the crust. I used chocolate chip cookie dough because of Chocolate Chip Day. Next, spray a baking sheet or metal pizza pan with nonstick spray and spread the dough in a circle. Bake it for about 20 minutes at 350 degrees or until golden brown. Then, wait for the cookie to cool, and top with whatever toppings sound appealing. Easy! Done! Yum!

Toppings

One of the best things about this recipe, or any pizza recipe, is that the kiddos really can make it personal with their favorite toppings. You can choose just about any toppings you like, and that comes in handy when grocery store options might be a little limited… or you run out of time to buy toppings, like I did.
Here are some excellent topping choices…

  • The Supreme Look Alike: Strawberry or raspberry jam or jelly for sauce, a heavy drizzle of melted white chocolate for cheese, fruit leather cut in circles for pepperoni, licorice vines sliced for black olives, green or yellow gummy candy chopped for peppers, and gummy fish for anchovies.
  • The PB&J: Peanut butter cookie dough for the crust, jam or jelly for the sauce, a heavy drizzle of melted marshmallow fluff for cheese, sliced banana for pepperoni, blueberries and sliced strawberries for other toppings.
  • Reese’s Pizza: Peanut butter cookie dough for the crust, chocolate frosting or Nutella for the sauce, shred some of a block of white chocolate for the cheese, mini Reese’s Peanut Butter Cups and Reese’s Pieces for extra toppings.
  • The Chocoholic: Chocolate chip cookie dough for the crust, chocolate frosting for the sauce, a heavy drizzle of melted white chocolate for cheese, and whatever chocolate candies or cereal sound yummy for toppings.
  • The Chocolate Dipped Strawberry: Chocolate chip cookie dough for the crust, strawberry jam for the sauce, shredded white chocolate for the cheese, sliced banana for pepperoni, sliced strawberries for other toppings, and a drizzle of chocolate syrup or hot fudge on top.
  • The Aloha: Sugar cookie or chocolate chip cookie dough for the crust, pineapple jam for the sauce, white chocolate chips and coconut for cheese, sliced banana and chopped pineapple for toppings.
  • The Claus Pantry (aka the one pictured): Chocolate chip cookie dough for the crust, chocolate frosting for sauce, shredded coconut for cheese, sliced banana for pepperoni, chopped pecans and Cocoa Krispies Cereal for ground meat, and pineapple and mini marshmallows for additional toppings.

Random story

I inherited my love of baking from my wonderful grandmother. Every time I went to her house, she was cooking or baking, and she always let me help. She had the best hugs and was so gentle and loving toward any children. I forgot to upload a photo to share, but honestly, if you are familiar with Disney‘s Cinderella, you will know exactly what she looked like. She looked just like Cinderella’s fairy godmother.

Honestly, she is probably the role model that inspired my entire Mrs. Claus persona.
At about the time I was preparing to move out on my own, my grandmother gifted me a cookbook full of her best recipes, mostly handwritten on recipe cards. She gave one to each of her granddaughters. Well, I lost mine. During one of my first moves it disappeared. However, at some point I must have removed some of the cards from the book. So, I still have a couple of her recipes in her handwriting.
Well, the chocolate chip cookie recipe I used for this recipe is one of my grandmother’s recipes! Don’t get too excited. It’s just the Toll House recipe off the bag, but it’s special because it’s handwritten by my grandmother.
The recipe is special, too, because she made it a lot. My grandfather, my uncle, my aunt, and my father all loved chocolate chip cookies. So, she tried to always have a batch of dough in the refrigerator. I say “tried” because my grandpa would eat chocolate chips by the handful, and sometimes she didn’t have any chocolate chips to make the cookies. Also, my dad would sneak bites of dough from the refrigerator, even as an adult. So, sometimes my grandma would go to the fridge to pull out her dough and make a batch of cookies only to discover that it was almost all eaten.
With that in mind, I would love to share with you my grandmother’s well-used Toll House cookie recipe. I will include directions on how to make the cookies or the pizza, too.


Chocolate Chip Cookies or Pizza Cookie

Makes two medium pizzas or however many cookies depending on size
Prep time: 15 minutes
Cook time: 10-12 minutes for cookies, 20-25 minutes for pizza

Ingredients:

  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1/2 tsp water
  • 2 eggs at room temperature
  • 2 1/4 cup sifted flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 (12 oz) package chocolate chips
  • 1 cup nuts (optional)
  • Toppings of choice (optional and if making “pizza”)

Cookie Directions:

  • Preheat the oven to 375°.
  • Beat butter with a mixer and add the next five ingredients one at a time beating continually until mixture is creamy.
  • Add flour to creamy mixture. Then, add baking soda and salt on top of flour. Stir baking soda and salt into flour. Then mix flour mixture into creamy mixture with a spoon or beater on a low setting until thoroughly mixed.
  • Stir in chocolate chips and nuts.
  • Drop spoonfuls of dough onto a baking sheet.
  • Bake at 375° for 10-12 minutes.

Pizza Directions:

  • Preheat the oven to 350°.
  • Beat butter with a mixer and add the next five ingredients one at a time beating continually until mixture is creamy.
  • Add flour to creamy mixture. Then, add baking soda and salt on top of flour. Stir baking soda and salt into flour. Then mix flour mixture into creamy mixture with a spoon or beater on a low setting until thoroughly mixed.
  • Stir in chocolate chips and nuts.
  • Spray two baking sheets with nonstick spray. Spread half of dough into a circle on each cookie sheet.
  • Bake at 350° for 20-25 minutes. Check after first 15 minutes to be sure it’s not getting too brown.
  • Cool completely.
  • Decorate with “pizza toppings” of choice.
